Cantonese is a regional language which originated in southern China. It is most widely spoken in the Guangdong Province of this region, including the capital city of Guangzhou. It is commonly called Yue by the locals, although it is merely a Yue dialect.

If you tried to speak Mandarin to Chinese speakers in Hong Kong, they might get offended because they speak the Cantonese dialect. This is the dialect taught in Hong Kong schools. Only the schools in mainland China teach Mandarin as a primary language.

Cantonese is one of the oldest Chinese languages, even older than Mandarin. It has been around for about 2,000 years, while Mandarin’s only existed for about 750 years. Most Chinese immigrants in other countries speak Cantonese too. The reason is that many of these immigrants originally come from Hong Kong, where Cantonese is taught as an official language.
As for the writing system, Cantonese shares the same standard writing system as Mandarin. That is why the true difference between the languages comes from the linguistics rather than the writing. However, the government of China attempted to simplify its Chinese characters in the 1950s. The objective was to increase Chinese literacy among more speakers. But the people who grew up in Hong Kong and Taiwan were taught the traditional Chinese characters instead. They can still understand the simplified characters if they ever visit mainland China.
